Coffee Cake Cupcakes

So, what do you do when a friend is borrowing the only cake pan you have and you want to make a Coffee Cake?  Split the batter into two?  I think not......



I think Cupcakes are just what the doctor ordered! :)

Last night, I really wanted to make a coffee cake, and with a friend **cough Lizz cough** borrowing my cake pan, I figured, 'Let's give cupcakes a try!'  So, off we went.

I have been doing some investigating on coffee cake recipes, so I assumed I could do it on my own.....Here's how I did it!

**Also, I know you are probably used to more pictures, however, all of my subjects were eaten before anymore shots than this one could be taken.  Sorry ;)

Ingredients:


Cupcakes:

  • 2 Boxes of Jiffy Golden Yellow Cake Mix (They are really tiny)
  • 2 Eggs
  • 1 Cup Water
  • 1 Stick of butter (melted)
  • White Sugar
  • Brown Sugar
  • Cinnamon
Glaze:
  • 1 Cup Powdered Sugar
  • 4 Tbsp Milk
  • Cinnamon
  • Vanilla Extract
Directions:
  1. Preheat oven to 350 degrees.
  2. Mix the cake mix as directed on the box.  After it is mixed, add cinnamon to taste to the batter.
  3. Fill paper lined muffin tin half full. Bake for approx. 15 minutes.
  4. While cupcakes are baking, mix butter, white sugar, brown sugar, and Cinnamon.  (I used approx. 1.5 Cups White sugar, 1/2 Cup Brown Sugar, 3 Tbsp Cinnamon).  This should make a paste (you can use less butter if you would like it to be more crunchy-like)
  5. After 15 minutes, pull the cupcakes out of the oven.  Place a small spoonful of the buttery/sugary mixture in the center of the cupcake (This should sink into the soft batter)
  6. Place cupcakes back in the oven to complete baking.  Total Baking Time: approx. 20 minutes in the oven.
  7. While the cupcakes are finishing baking, mix Powdered Sugar, Milk, Cinnamon to taste (I used approx. 1/2 Tbsp.) and Vanilla Extract (approx. 1/2 tsp).
  8. After the cupcakes come out of the oven and sit for about 15 minutes, drizzle the Glaze over the top of the cupcakes, (Go ahead and make it messy, they look prettier that way anyways!!) and place in the refrigerator for about 2 hours, until the Glaze sets. (Or be like my husband, just eat them!).
