Blackberry Cobbler Cupcakes


The wait is over!!! I made these in the hopes of a new summer favorite... and I succeeded!  



Recipe:
  • 1 Yellow Cake Mix (and all the ingredients it calls for)
  • 1 Pint of fresh blackberries
  • 2 Tbsp White Sugar
  • 1 Container of Whipped Vanilla Icing
  • 2 Tbsp Light Brown Sugar


Directions:
  1. Preheat oven to 350 degrees
  2. Mix Yellow Cake mix as box directs
  3. Fill Cups 2/3 full and set 3 blackberries on top of the batter.  Sprinkle with white sugar.
  4. Bake for 20 minutes or until golden on top.
  5. Mix the brown sugar into the container of icing.
  6. Ice cooled cupcakes and decorate with fresh blackberries on top.

These cupcakes are so easy to make, and delicious!  These would be great for a family cookout this weekend!  Enjoy!
