Turtle Cupcakes

For the chocolate lovers, I have made a Turtle Cupcake.  Baking with caramel can be quite messy, so I like to start with solid caramel as opposed to liquid caramel.  It makes for a better surprise in the middle, because after baking the caramels turn soft, and stay that way after they have cooled.  Feel free to add ingredients to make them your own!

 Turtle Cupcakes:


Ingredients:

  • 1 Chocolate Cake Mix (Any chocolate flavor should work fine) and all ingredients called for
  • 2 Cups Milk Chocolate Chips
  • 1/2 Cup Chopped Pecans
  • 2 Cups Quartered Caramel Candies
  • Chocolate Icing (Your preference)
Directions:
  1. Preheat oven to 350 degrees
  2. Mix cake batter as instructed on the package
  3. Fill Cups 2/3 full (I use an ice cream scoop to make sure they are all even)
  4. Bake cupcakes for 10 minutes
  5. Mix the Pecans, Chocolate Chips, and Quartered Caramel Candies
  6. Pull cupcakes out of the oven and place a spoonful of the pecan/chocolate chip/caramels mixture in the center of the cupcake top (it will sink to the middle)
  7. Bake for another 10 minutes
  8. Let the cupcakes cool before icing with the Chocolate frosting.
  9. Decorate with the leftover Pecans, Caramels, and Chocolate Chips.
