Strawberry Lemonade Cupcakes

If you love summer, like I do, then these are the cupcakes for you!  They have everything that makes me think of a summer from my childhood spent outside during every waking moment.  The lemonade portion of the cupcake is so tart and delicious, and it melts into the strawberry on top to make a great beginning to a wonderful summer treat!


Strawberry Lemonade Cupcakes
Ingredients:
  • 1 Strawberry Cake Mix
  • 1 Lemon Cake Mix
  • 2 Containers of Vanilla Icing
  • 1 Pint Strawberries (or more if you'd like)
  • 1 Package of Kool-Aid Lemonade Mix
  • 2 Tbsp White Sugar
Directions:
  1. Preheat oven to 350 degrees
  2. Mix the 2 cake mixes as instructed on the box (separately)
  3. Pour each batter into it's own Ziploc Bag (You will probably want Quart or Gallon sized)
  4. Snip the corner of the bags and pipe batter into the cups, filling 2/3 full (it helps to have an extra set of hangs for this step)
  5. Take a toothpick or chopstick and lightly mix the batters (making a swirl, not completely mixed)
  6. Bake for 20 minutes.
  7. Mix the packet of Lemonade mix with the white sugar
  8. Let the cupcakes cool before icing with Vanilla Frosting
  9. Decorate with sliced strawberries and lemonade/sugar mix.  Feel free to sprinkle with Pink Sugar too!
  10. Chill the cupcakes to set.  

The frosting on these cupcakes is not the firmest I have ever worked with, so try to keep them out of too much heat.

Also, if you don't like how tart the lemonade flavor is, add more sugar!
